WHere is a simplified version of a cocktail from the seasonal menu. Designed as a large-volume prepared mix that is packed with essence of the festive period, making it ideal for hosting a holiday party. Save the extra citrus syrup for breakfast cocktails, puddings, or for another batch of the drink.

Serves 10 servings
To make the Citrus Syrup (yields 750ml)
300ml recently pressed clementine juice
200ml fresh lemon juice
500g fine sugar
For the Premix (produces 850ml, to serve 10)
400ml good quality vodka
100ml classic gin
150ml peach schnapps
200ml clementine syrup (see above)
Whole cranberries, to garnish
Mandarin essential oil, as a final touch
Instructions
To prepare the Cordial: Place the listed components into a saucepan, bring to a gentle boil, agitating to dissolve. Next, take off the stove allowing it to cool completely. Transfer to a sealable bottle, cap it and store in the refrigerator, it will last for about four weeks.
Preparing the Cocktail Base: Pour all the spirits and syrup in a sizeable container, let it rest for one hour, then pass it through preferably using muslin, making it completely strained.
When ready to serve: Add 85ml of the cocktail base into your stirring glass filled with ice, gently stirring gently for about 60 seconds until cold. Filter into an cold coupe glass or equivalent, decorate with the cranberries adding the final touch by giving it a quick spritz of mandarin oil above the glass.
